Grilled Chicken Bruschetta

Who doesn’t love a good bruschetta? Now try it as a topping to our fully cooked and portioned Oven Roasted Chicken Breast. This will be a definitive crowd pleaser. Take this entrée up a notch further by topping it with a layer of guacamole, followed by bruschetta, 2 slices of cooked bacon, and shredded cheddar. Place in oven long enough for the cheese to melt and secure the layers. Your patients and guests will put this on their frequent flyer list, and it takes you only minutes to prepare.

Ingredients:

  • 4 chicken breasts
  • 2 tbsp extra virgin olive oil
  • 2 tsp red balsamic vinegar
  • 12 basil leaves, fresh chopped
  • 1 tsp fresh pressed garlic
  • 6 ripe plum tomatoes
  • 2 tbsp freshly grated parmesan
  • To taste salt & pepper
Directions:
 
1. Reheat chicken to 165 degrees.
2. Combine bruschetta ingredients while chicken is cooking.
3. Remove chicken from oven and plate. Portion fresh bruschetta evenly atop each piece.
Asian Chicken Lettuce Wraps

Ingredients:

  • 1 pound of Ada Valley Meat Chicken Crumbles #27990
  • 1 tbsp dark sesame oil
  • 1 tbsp canola oil
  • 1 tbsp rice vinegar
  • 2 tbsp Kikkoman Low-Sodium Soy Sauce
  • 1 1/2 tsp chili garlic sauce
  • 1 tsp chopped ginger
  • 2 tsp chopped garlic
  • 2 green onions, thinly sliced
  • A dash of salt
  • 8 boston lettuce, butterhead, or romaine leaves
  • 1/2 cup bean sprouts
  • 1 lime, cut into wedges
  • Chopped peanuts (optional)
Directions:
 
1. Combine oils, rice vinegar, soy sauce, chili garlic sauce, ginger, garlic, and green onions in a sauté pan; stir with a wire whisk.
2. Add 1 pound Ada Valley Meat Chicken Crumbles and sauté over low heat, reheating chicken to 165 degrees
3. Remove salad green core and rinse. Separate leaves and dry.
4. Divide seasoned chicken evenly among lettuce leaves; top each with sprouts.
5. Serve with lime wedges and garnish with chopped peanuts.
Thai Lettuce Wraps

The food and beverage industry predicted experiential dining as a top trend to watch. Engaging your customer in creating a customized entrée out of an array of toppings is a great way to create something that is both unique and fun. Appeal to their sense of adventure by offering build your own Thai wraps. Choose from any one of the following fully-cooked, production saving Ada Valley proteins:

Ingredients:
  • 1 pound of the Ada Valley Meat Crumble of your choice
  • 2 tbsp extra virgin olive oil
  • 3 tbsp reduced sodium soy sauce
  • 2 tbsp light brown sugar
  • 2 tbsp rice vinegar
  • 1 tsp ginger, crushed
  • 1 tsp garlic, minced
  • 1 tsp pepper flakes (optional)
  • 12 butter lettuce leaves
  • 1 cup chopped cucumber
  • 1 cup carrots, matchstick cut
  • 1/2 cup radish, thinly sliced
  • 1/2 cup peanuts, chopped
Directions:
  1. Combine the olive oil, low sodium soy sauce, brown sugar, rice vinegar, and optional pepper flakes in a saucepan. Add the selected protein, stir well, and reheat to 165 degrees Fahrenheit.
  2. Clean and prep vegetables.
  3. Layer each leaf lettuce with 1/4 cup of protein topped with a layer of cucumber, then add matchstick carrots and a sprinkling of chopped peanuts. Top with a dash of soy sauce.
