Bourbon and Maple Glazed Pork Tenderloin

Commercial glazes can be quite high in sodium, defeating the healthy benefits of our specially crafted Ada Valley Meat Low Sodium Pork Loin. Available precooked in our #27889 pork loin, which comes in a case 2/9-11 lbs. Only 110 mg per serving! Glazes are an easy way for you to transform a single product from week to week and season to season. Enjoy our fall glaze favorite.

Ingredients:
  • 4 portions of Ada Valley Meat, Low Sodium Pork Loin Roast #27862
  • 1/4 cup Bourbon
  • 1/2 cup Maple Syrup
  • 1 garlic clove, minced
  • 1 tsp. Apple Cider Vinegar
  • 1 Tbsp. Honey
  • 2 Tbsp. Dijon Mustard
  • 2 tsp. Extra Virgin Olive Oil
Directions:
  1. Prepare glaze. Combine bourbon, maple syrup, garlic, apple cider vinegar, honey, and Dijon mustard in a small saucepan. Simmer over low heat for 3-5 minutes until sauce is slightly thickened. Remove from heat and let cool. Divide into 2 separate bowl: 1 for precooked pork and 1 for service.
  2. Brush Pork Loin with 1/2 the glaze. Reheat Pork Loin to 165 degrees Fahrenheit
  3. Garnish pork with freshly baked chopped apples and top with remaining glaze. Serve with a side of brown rice and roasted Brussels sprouts.
Thai Lettuce Wraps

The food and beverage industry predicted experiential dining as a top trend to watch. Appeal to their sense of adventure by offering build your own Thai wraps. Choose from any one of the following fully-cooked, production saving Ada Valley proteins:

Ingredients:
  • 1 pound of the Ada Valley Meat Crumble of your choice
  • 2 tbsp extra virgin olive oil
  • 3 tbsp reduced sodium soy sauce
  • 2 tbsp light brown sugar
  • 2 tbsp rice vinegar
  • 1 tsp ginger, crushed
  • 1 tsp garlic, minced
  • 1 tsp pepper flakes (optional)
  • 12 butter lettuce leaves
  • 1 cup chopped cucumber
  • 1 cup carrots, matchstick cut
  • 1/2 cup radish, thinly sliced
  • 1/2 cup peanuts, chopped
Directions:
  1. Combine the olive oil, low sodium soy sauce, brown sugar, rice vinegar, and optional pepper flakes in a saucepan. Add the selected protein, stir well, and reheat to 165 degrees Fahrenheit.
  2. Clean and prep vegetables.
  3. Layer each leaf lettuce with 1/4 cup of protein topped with a layer of cucumber, then add matchstick carrots and a sprinkling of chopped peanuts. Top with a dash of soy sauce.
Bacon Jam

Bacon jam is a relatively new relish phenomenon. It’s made using a slow cooking method combining bacon, onions, brown sugar, rich coffee, vinegar, and spices through a series of steps and then processing them into a chunky spread or blended jam. Ingredients:
  • 1/4 cup extra virgin olive oil
  • 2 large red onions, diced
  • 1 lb bacon
  • 1/2 jalapeno pepper, seeded and minced (optional)
  • 4 sprigs thyme
  • 2/3 cup brown sugar
  • 1/2 cup brewed coffee, strong
  • 2 tbsp apple cider vinegar
Directions:
  1. Precook bacon in the oven. Chop
  2. Cook the onions in the olive oil until translucent.
  3. Add chopped bacon, thyme, and optional jalapeno. Cook on low heat for 10-12 minutes until bacon is cooked. Remove excess fat.
  4. Add brown sugar and 1/2 cup strong coffee. Cook on low heat for 20-30 minutes until you have a nicely, reduced thickened mixture.
  5. Add the apple cider vinegar.
  6. Pulse mixture in a food processor to the desired consistency.
